The Open That Bottle Nighttradition began in early 2000, when wine journalists Dorothy J. Gaiter and John Brecher from The Wall Street Journal newspaper encouraged readers to stop saving special bottles "for someday" and open them right now—ideally in the company of people they care about. Their idea gradually became a global wine tradition, celebrated annually by restaurants and wine lovers across continents.
